Summer time is fava bean time.
They do take some work, but its so worth it.

Start by removing the beans from the pod. You need about 2 oz beans.
Cook them for 4 minutes, then peel of the skin.

Rub 12 sliced of baguette with a clove of garlic and drizzle with olive oil.
Bake until golden.

Mash the beans with grated lemon zest of 1/2 lemon.
Top the baguette slices with the beans, drizzle with oil, salt and pepper.
Add some parmesan and voila... you have this summers best little appetizer.

Sunday Recipe_Potato, Pea and Rosemary Soup





Potato, Pea & Rosemary Soup (Serves 2)
vegan, vegetarian, gluten free, dairy free

Ingredients 
2 Medium Potatoes, peeled and chopped into chunks (around 400g/14oz/2.5 cups)
1 Onion, finely sliced
1tbs Dairy & gluten free margarine (or butter)
2tsp Fresh rosemary leaves, finely chopped
750ml/ 26floz/3 cups Vegetable stock
125g/4.5oz/1 cup Frozen peas
Freshly ground black pepper

Method 
  • In a pot, melt the margarine over a low heat and add the onion. Allow the onions to soften and then add the potatoes and allow to brown slightly. Once the potatoes and onion are starting to brown add the vegetable stock, peas and rosemary. 
  • Allow the soup to simmer over a low heat until the potatoes are cooked through. Season with a good grind or two of black pepper and then remove from the heat and allow to cool slightly. 
  • Once the soup has cooled a little it can be pureed in a blender or food processor. Be careful of any steam or hot soup splatters when doing this.
  • If you like a chunkier soup you can remove some of the peas and potatoes before blending and then stir them back in before serving.

After friday and saterday, I prefer to eat fresh food.

today's recipe is salmon and potato salad with yoghurt dressing.

serves 4

4 large slices fresh salmon
salt
pepper
2 tablespoons olive oil
14 small potatoes, boiled
1 head of lettuce, shredded
2 tablespoons capers
2 tablespoon dill, chopped
1 teaspoon lemon zest
2 cups plain yoghurt
2 tablespoons lemon juice
salt
pepper

Place the salmon on a baking tray and sprinkle with salt and pepper.
Drizzle with olive oil.
Bake at 350F for 8 minutes.
Remove, cool and cut into pieces.
Slice the potatoes and mix with lettuce, capers, dill, lemon zest and salmon.
Mix yoghurt and lemon juice in a bowl and taste with salt and pepper.
Pour the dressing over the salad and serve.
Enjoy!

Friday dinner


Im not the biggest fan of tomato sauces.
I find them very often heavy and to sweet.
And when they come with those huge meatballs on top......not my thing.
Don't get me wrong, 
I love italian food,
but there is just something about tomato sauces that I don't find that appetizing.
So my take on the tomato sauce is quite simple.
I heat up small tomatoes in the owen until they crack,
mix them with freshly cooked pasta and ad herbs and parmesan.
The dish is light, tasty and very easy to make.
Enjoy!

Serves 4
30 small tomatoes,type mini plum or cherry 
4 tablespoons olive oil
1 pound freshly cooked pasta
1 bunch fresh basil, just the leafsolive oil

1 cup freshly grated parmesan
Place the tomatoes in an oven proof dish and drizzle with olive oil.
Bake at 380F until the start to crack.

Place the freshly cooked pasta in a bowl,
add tomatoes, basil, olive oil and parmesan.
Mix and serve.
