Im not the biggest fan of tomato sauces.
I find them very often heavy and to sweet.
And when they come with those huge meatballs on top......not my thing.
Don't get me wrong,
I love italian food,
but there is just something about tomato sauces that I don't find that appetizing.
So my take on the tomato sauce is quite simple.
I heat up small tomatoes in the owen until they crack,
mix them with freshly cooked pasta and ad herbs and parmesan.
The dish is light, tasty and very easy to make.

Serves 4
30 small tomatoes,type mini plum or cherry
4 tablespoons olive oil
1 pound freshly cooked pasta
1 bunch fresh basil, just the leafsolive oil
1 cup freshly grated parmesan
Place the tomatoes in an oven proof dish and drizzle with olive oil.
Bake at 380F until the start to crack.
Place the freshly cooked pasta in a bowl,
add tomatoes, basil, olive oil and parmesan.
Mix and serve.
